Creamed White Turnips
Ingredients
1 1/4 lb. turnips
2 Tbsp. finely chopped fresh chives (optional)
2 Tbsp. milk
1 tsp. sugar
1/4 tsp. salt
dash of pepper
Cooking Instructions
Peel and quarter turnips. In a medium saucepan, cover the turnips with water. Bring to a boil over high heat. Lower the heat and simmer, covered, for 30 to 35 minutes or until very tender. Drain In a medium bowl, with an electric mixer on LOW, beat the turnips until almost smooth. Add the chives (if using), the milk, sugar, salt, and pepper. Beat until light and fluffy. Serves 3.
