Crazy Fruit Upside Down Cake
Ingredients
2 to 3 C. chopped fruit, pineapple, banana, blueberries, peaches
1 Tbsp. vegetable oil
1/2 to 1 tsp. cinnamon, or nutmeg
Cake:
1 large egg
1/4 C. vegetable oil
2 Tbsp. milk
1/2 C. unsweetened fruit juice, apple, orange, or pineapple juice
1-1/2 C. unbleached all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
Cooking Instructions
Combine fruit, 1 Tbls. oil, and cinnamon or nutmeg in bowl. Toss together. Spoon into oiled 8-inch square baking dish. Set aside. Beat together egg, 1/4 C. oil, milk and fruit juice. Combine flour, baking powder and baking soda. Stir into juice mixture and beat until smooth. Pour batter evenly over fruit and smooth top. Bake at 350 degrees F. for 30 minutes. Cool to just warm, and turn out onto a serving dish. Serve plain or with ice cream or whipped cream.
