Corn Oysters
Ingredients
2 egg yolks
2 C. fresh corn, grated
1/2 tsp. salt
1/4 tsp. pepper
1/4 C. flour
3 egg whites, stiffly beaten
Cooking Instructions
Add the beaten egg yolks to the grated corn and add salt and pepper. Mix in flour and fold in the well-beaten egg whites. Drop onto a well-greased skillet in globs the size of an oyster. Brown on both sides and serve at once. Makes 12.
