Cooked Meat Croquettes
Ingredients
MEAT MIXTURE
1/4 c onions,Chopped
1 T oil
2 c diced meat, ham, chicken, -beef or fish, cooked
3 T celery,Minced
1 T green bell pepper,Minced
1 T fresh parsley,Minced-(optional)
or 1 teaspoon oregano,Dried
1 t paprika
1/2 t salt
1/4 t black pepper or pinch cayenne pepper-(optional)
2 t lemon juice
2 T cracker meal,breadcrumbs or – white
1 egg
ROLLING MIXTURE
2 c fresh bread crumbs
2 eggs
Oil -for frying
White Sauce – Medium or-Thin,(see recipe)
Cooking Instructions
Heat the butter in a heavy-bottomed saucepan over medium flame. Whisk in the flour and cook the flour-butter mixture (roux) for 1 or 2 minutes, or until it turns a light blond color. Do not brown.
Whisk in the cold milk all at once. Continue whisking as the milk comes to a boil. Reduce heat to low, stir in the salt, pepper and optional seasonings, and simmer for another 15 to 20 minutes. Strain through a sieve.
