Coconut Squash
Ingredients
2 C. squash, mashed
1 C. fine biscuit or bread crumbs
1 1/2 C. milk
1 C. sugar
1/ 2 C. coconut, grated
2 egg yolks, well-beaten
3 Tbsp. butter, melted
1 1/2 orange peel, grated (optional)
1/2 tsp. nutmeg
3/4 tsp. salt
Cooking Instructions
Mix all ingredients thoroughly. Baked slowly in a casserole until mixture thickens and is slightly browned. Make a meringue of the egg whites and 2 Tbsp. sugar. Spread over squash and return to oven until meringue is browned.
