Coconut Pecan Icing
Ingredients
1 C. evaporated milk
1 C. sugar
4 egg yolks
1 tsp. vanilla extract
1 1/3 C. coconut
1 C. pecans; chopped
Cooking Instructions
Cook milk, sugar, egg yolks, and vanilla extract until thickened. Add coconut and pecans. Cool, then beat until it is of spreading consistency.
