Coconut Layer Cake
Ingredients
2 C. cake flour; sifted
2 tsp. baking powder
1/2 tsp. salt
2/3 C. butter; or shortening
1 C. sugar
3 eggs; unbeaten
1/3 C. milk
1 tsp. vanilla
Seven Minute Frosting:
1 1/2 C. sugar
1/4 C. plus 1 Tbsp. cold water
2 egg whites
1 Tbsp. light corn syrup
Dash salt
1 tsp. vanilla extract
Fudge Frosting:
3 unsweetened chocolate
1 1/2 C. milk
3 C. sugar
Dash salt
3 Tbsp. light corn syrup
3 Tbsp. butter
1 1/2 tsp. vanilla
Cooking Instructions
Sift flour once, measure, add baking powder and salt, and sift together three times. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beating thoroughly after each. Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla. Bake in two greased 9-inch layer pans in moderate oven at 375degrees) 25 to 30 minutes. Spread Tinted Seven Minute Frosting between layers and on top and sides of cake. Sprinkle top and sides of cake with Baker’s Southern Style Coconut. Spread Fudge Frosting between layers and on top and sides of cake. Decorate sides of cake with chopped pecans, if desired. Seven Minute Frosting: Combine all ingredients except vanilla in top of a large double boiler. Beat at low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla; beat 2 minutes or until frosting is thick enough to spread. Fudge Frosting: Add chocolate to milk and place over low flame. Cook until mixture is smooth and blended, stirring constantly. Add sugar, salt, and corn syrup; stir until sugar is dissolved and mixture boils. Continue boiling, without stirring, until a small amount of mixture forms a very soft ball in cold water (232 degrees). Remove from fire. Add butter and vanilla. Cool to lukewarm (110 degrees). Beat until of right consistency to spread. If necessary, place over hot water to keep soft while spreading. Makes enough frosting to cover tops and sides of two 9-inch layers, or top and sides of 13 x 9 x 2 inch cake.
