Coconut Cupcakes With Guava Frosting
Ingredients
1/2 C. milk
2 Tbsp. butter
2/3 C. sugar
5 Tbsp. coconut syrup
1 C. cake flower
1 tsp. baking powder
4 egg whites
1/4 tsp. cream of tartar
Guava Frosting:
Little salt
1/2 C. guava jelly
1 egg white
Cooking Instructions
Scald milk, butter, sugar and coconut syrup together. Sift flour, baking powder and salt. Stir these ingredients into the milk mixture. Whip the egg whites until they are foamy, add cream of tartar and whip until they are stiff but not dry. Fold into the cake mixture. Bake in greased muffin tin at 375 degrees for 10 to 12 minutes. Makes 12 medium sized cup cakes. Top with Guava Frosting. Guava Frosting: An electric mixer is best for this. Beat egg white until foamy. Add salt and one tsp. of the jelly at a time until it is thick enough to spread. It takes just about seven minutes of beating to get to the right consistency.
