Cocinero Apple Pie
Ingredients
6-8 apples (Grannie Smith or Golden Delicious)*
1/2-3/4 C. brown sugar, sprinkled over apples
Juice of 1/2 lemon, add to apple
1 tsp. cinnamon, sprinkled over apples
2 cubes butter, chopped & sprinkled over apples
1/2 C. raisins, add to apples
1/2 can evaporated milk, pour over apple mixture
Cooking Instructions
*Wash apples well, cut in half and remove cores. Don’t peel. Grate up on hand grater. Place in well greased Dutch Oven. Next: 2/3-1 C. milk 1/2 C. sugar Mix Bisquick, milk and sugar to form a dough. You don’t want it real stiff, but just so you can pour it over the apple mixture, about 1 inch thick. Brush lightly with melted butter. Put the lid on the oven and set over medium hot coals (or 6 briquettes). Place hot coals on the lid (or 8-10 briquettes) and cook until crust on top is nice and brown. To serve, spoon the top crust out, cover with the hot apple mixture and pour a little “canned cow” or cream over it. Wow, gimme another shot of that! What’s a Cocinero? That is what the old time cowboys in the southwest used to call the chuckwagon cooks.
