Citrus Cake
Ingredients
1/2 C. plus 5 Tbsp. butter
7 ounces of sugar
Juice and rind of 1/2 of a lemon
Juice and rind of 1/2 of an orange
1-1/3 C. all-purpose flour
1 tsp. baking powder
3 eggs
Cooking Instructions
Cream butter, add sugar and beat until creamy. Add eggs, one at a time, beating well. Next add the juices and rinds, then flour and baking powder. Pour into cake pan with hole in the center but not to high. Bake in a preheated 350-degree oven for about 45 minutes. Let cool and frost. Frosting: Mix together 1 C. powdered sugar, 1 Tbls. orange juice and 1 Tbls. lemon juice.
