Cinnamon Yogurt Breakfast Ring
Ingredients
1/2 C. plus 6 Tbsp. margarine
1 C. sugar
1 tsp. vanilla
1 whole egg
2 egg whites
3 C. all purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 C. plain low fat yogurt
TOPPING:
1/2 C. light brown sugar, firmly packed
2 Tbsp. all purpose flour
2 tsp. ground cinnamon
2 Tbsp. margarine
1/2 C. chopped walnuts
Cooking Instructions
In large bowl beat margarine, sugar and vanilla. Add egg and whites, one at a time beating well after each. Combine dry ingredients; add alternately with yogurt to margarine mixture. Spoon half the batter into a greased and floured 10 inch tube pan. Sprinkle with half the topping (below). Add remaining batter; sprinkle with remaining topping. Bake in a preheated 350 degree oven 1 hour and 10 minutes. Cool in pan 10 minutes; remove and cool on wire rack. TOPPING: In small bowl combine dry ingredients; add margarine; mix until crumbly. Stir in nuts.
