Christmas Stollen:
Ingredients
1/2 C. milk
1/4 C. butter; or margarine
1 egg
1/4 tsp. almond extract
1/4 tsp. rum extract
1/3 C. sugar
3/4 tsp. salt
1/8 tsp. mace
dash cardamom
2 tsp. grated lemon peel
2 tsp. grated orange peel (fresh again)
2 C. bread flour
2 1/2 tsp. yeast at the beep (or by hand after the first kneading), add:
1/3 C. golden raisins
1/3 C. currants
1/3 C. slivered almonds
1/3 C. mixed candied fruit
Cooking Instructions
Bring all ingredients to room temperature and pour into bakery, in order. Set “baking control” at 10 o’clock. Select “white bread” and push Start.
