Christmas Eve Seafood Chowder
Ingredients
2 cans (10 oz.) frozen shrimp soup*
1 qt. milk
2 C. water
2 pkg. (12 oz. each) frozen haddock
fillets
2 cans (4 1/2 oz. each) clean shrimp
(drained & rinsed)
2 pkg. (10 oz. each) frozen lobster
tail (cooked, cut)
1 tsp. dried green onion, chopped (or
fresh)
1 tsp. thyme
Salt & pepper
Cooking Instructions
Combine soup, milk and water. Bring to boil. Add fish that has been cut into 1 inch chunks. Simmer about 5 minutes. Add shrimp, lobster, onion and thyme. Simmer another 5 minutes. Season to taste. Makes about 2 1/2 quarts. *This is difficult to find so substitute Campbell’s cream of shrimp soup.
