Chocolate Raspberry Cake
Ingredients
1 devils food cake mix
1 C. sour cream
3 large eggs, separated
3/4 C. water
1 pint fresh ripe raspberries, rinsed
12 ounces pack white chocolate chips
1 C. whipping cream
1/2 tsp. vanilla extract
Cooking Instructions
Beat egg whites until peaks form, set aside. In another bowl mix cake mix, yolks. sour cream and water until well blended. Fold in egg whites. Bake at 350 for 45 minutes in 3 9-inch cake pans that have been greased and floured. Remove cakes from pan to cool. In saucepan over medium heat, bring whipping cream to a slow boil. Add chips. Remove from heat and stir until melted. Pour it into small mixing bowl and have a larger mixing bowl filled with ice under it. As it starts to thicken, add extract and whip at high speed about 5 minutes. Ice top of bottom layer and arrange raspberries in an even layer repeat with next layer. Ice sides with chocolate icing. Garnish top with a few berries.
