Chillies And Pepper Con Queso
Ingredients
1 Tbsp. groundnut oil
1/2 onion thinly sliced
2 green chilies de seeded and thinly sliced
1 green pepper de seeded and sliced
1 large tomato grilled, peeled, de seeded and mashed
3 fluid ounces milk
4 ounces vegetarian cheddar cheese grated
2 ounces mozzarella cheese
Cooking Instructions
1. Heat the oil in a heavy based saucepan and fry the onion, chilies and pepper for 4 minutes. 2. Add the mashed tomato and fry for a further 4 minutes. 3. Add the milk and cheese and simmer gently until the cheese is melted. Do not allow the cheese to bubble. 4. Serve immediately.
