Chili Non Carne
Ingredients
2 Tbsp. oil
1 medium onion, chopped
1 1/2 tsp. chili powder
2 each 4 1/2 ounces packets tvp chunks
1 1/2 C. vegetable stock
16 ounce canned tomatoes, chopped
16 ounce canned kidney beans
2 each Mexican green chiles
drained and chopped, opt.
salt and pepper to taste
Cooking Instructions
Heat oil in large saucepan and sauté the onion until golden brown. Add chili powder and tvp chunks and brown 5 minutes. Add veggie stock and tomatoes together with their juice. Cover and simmer 20 minutes. Add the kidney beans if you’re using them, and simmer 15 minutes, adding extra liquid if necessary.
