Chicken With Ginger
Ingredients
1/2 C. butter or margarine or olive oil
3 whole chicken breasts, halved
salt/freshly ground black pepper
1 clove garlic, finely minced
1 C. chicken broth
1/4 C. ginger syrup
2 slices preserved ginger, chopped
juice of 1/2 lemon
1 Tbsp. cornstarch
3 Tbsp. cold water
2 Tbsp. chopped parsley
Cooking Instructions
Heat the butter or little olive oil in a large skillet and brown the chicken in it on all sides. Sprinkle with the salt and pepper. Add the garlic and cook until golden. Stir in the chicken broth, cover and cook until the chicken is tender, about thirty minutes. Remove the chicken to a warm serving platter. To the juices in the pan add the ginger syrup, chopped ginger and lemon juice. Simmer one minute. Stir in the cornstarch mixed with the cold water and cook, stirring, until the sauce is thickened. Add the parsley and return the chicken to the skillet. Cook five minutes. Arrange the chicken on a platter and spoon the sauce over it. Serve with cooked rice. You can thicken the sauce with flour instead of using the cornstarch and water.
