Chicken Salad Chinois
Ingredients
2 C. chicken, cooked, cut up
1/2 C. zucchini, chopped
1/2 C. radishes, chopped
1/4 C. yogurt, 2 percent
1 Tbsp. soy sauce
1/2 tsp. artificial sweetener, bulk granulated (like Sugar Twin)
1/2 tsp. ginger, ground
3 C. lettuce, shredded
Cooking Instructions
In a bowl, combine chicken, zucchini and radishes. In a C., combine yogurt, soy sauce, sweetener and ginger. Pour over chicken mixture to coat evenly. Refrigerate at least 2 hours before serving. Toss well gently to serve.
