Chicken Pate
Ingredients
1-1/2 C. chicken breast; cooked, minced
8 oz. cheese, softened
3 Tbsp. chopped onion
2 Tbsp. dry sherry
2 Tbsp. mayonnaise
2 tsp. lemon juice
1/4 tsp. hot sauce
1/8 tsp. ground nutmeg
dash of paprika
Cooking Instructions
Combine chicken (finely chopped), cheese, onion, sherry, mayonnaise, lemon juice, hot sauce, and nutmeg in a container of an electric blender; process until smooth. Transfer the mixture into 2-C. mould coated with cooking spray. Cover, and chill overnight. Transfer into a serving plate. Sprinkle with paprika. Garnish with parsley sprigs, if desired. Serve with Melba toast rounds or unsalted crackers.
