Chicken Marengo 2
Ingredients
3 pounds skinless chicken parts cut up
1 can diced tomatoes-15 oz.
1 medium onion sliced
10 strips bacon divided
1 can tomato paste 6 oz.
1 can mushrooms
Or use fresh sliced mushrooms
Cooking Instructions
Spray sides of crock pot with nonstick spray. Place washed, skinned chicken parts in bottom of crock pot. Scatter onion slices on top. Lay 5 slices of bacon on top of chicken and onions. Add can of diced tomatoes with juice. Cook on high for 1 hour then switch to low for 2 hours. Add the can of tomato paste and the mushrooms. Cook on low for about 1 more hour. Some crocks tend to cook a bit fast on low, so you may need to adjust times. Meanwhile, optional cook then crumble the remaining 5 slices of bacon. When serving, sprinkle the crumbled bacon over top of chicken. Serve over rice.
