Chicken Jubilee
Ingredients
1 lb. chicken cutlets
2 Tbsp. unbleached flour plus 2 tsp.
1/4 tsp. salt
1/4 tsp. pepper
1-1/4 tsp. canola oil
6 oz. dark cherries, canned in water, reserve juice
2 tsp. cherry preserves
2 Tbsp. brandy
Cooking Instructions
In a plastic bag, combine chicken cutlets with flour, salt, and pepper. Shake to coat well. Heat the oil in a skillet over medium high heat. Add the chicken cutlets, and cook on each side for about 4 to 5 minutes. Add the cherries, cherry juice, preserves, and brandy. Bring to a boil and boil 1 minute. Spoon the cherry juice over the chicken and serve.
