Chicken And Walnuts
Ingredients
6 boneless skinless chicken breast halves
1 tsp. salt
1/4 tsp. freshly ground black pepper
1/2 C. flour
1/4 C. butter or margarine
1 C. onion finely chopped
2 garlic cloves minced
1 bay leaf
1 tsp. grated ginger root
3/4 C. red wine
1/4 C. brandy
2 C. walnuts finely chopped
2 Tbsp. lemon juice fresh
1 tsp. grated orange peel
1 tsp. grated lemon peel
Cooking Instructions
Roll chicken in mixture of salt, pepper and flour. Melt butter in heavy skillet and brown chicken. Transfer chicken to crock pot. To skillet add onion, garlic, ginger and bay leaf. Sauté until onions are translucent. Add wine, brandy, and nuts. Mix well. Add lemon juice, orange peel, and lemon peel. Stir and cook 5 minutes to blend flavors. Pour over chicken. Cover crock pot, and cook on low 5 to 7 hours.
