Chicken A La King
Ingredients
1 tsp. virgin olive oil
1/4 C. celery, chopped
1 C. mushrooms, sliced
1-1/2 C. basic white sauce
2 C. cooked chicken
1/4 C. pimientos, drained, chopped
1/4 C. almonds, slivered, blanched
2 Tbsp. dry sherry (optional)
4 slices whole wheat bread, toasted and trimmed, or noodles, or rice
Cooking Instructions
In a large pan nonstick skillet or saucepan, heat oil. Sauté celery and mushrooms. Add white sauce, chicken and pimentos, stirring to combine, and heat through. Add almonds, sherry and pepper, to taste. Cut into triangles and spoon chicken over toast.
