Cheese Bacon And Tomato Pie
Ingredients
9 inch pie crust
1 medium onion chopped (about 1/2 C.)
2 Tbsp. all-purpose flour
1 medium tomato thinly sliced
8 slices bacon crisply cooked and crumbled
2 C. shredded mozzarella cheese
2 C. shredded lettuce
Cooking Instructions
Prepare 9 inch pie crust. Mix onion and flour; sprinkle in pie. Top with tomato slices; sprinkle with bacon and cheese. (To serve immediately, continue as directed.) If preparing ahead, cover and refrigerate for no longer than 24 hours. About 30 minutes before serving, bake pie, uncovered at 400 until cheese is melted or 25 minutes. Sprinkle with lettuce and serve. Not suitable for freezing.
