Catfish Stew2
Ingredients
1 lb. catfish fillets, skinned
1 C. chopped onion
1/3 C. melted fat
1 (1 lb. 12 oz.) can tomatoes
2 C. potatoes, diced
1 C. water
1/4 C. ketchup
1/2 tsp. salt
Pepper to taste
1 (1 lb.) can mixed vegetables
Cooking Instructions
Cut fillets into 1-inch pieces. Saute onion in the fat. Add the tomatoes, potatoes, water, ketchup, salt and pepper. Cover and simmer about 15 minutes longer or until the potatoes are cooked.
