Carrots With Coconut
Ingredients
1/4 C. coconut, flaked
2 lb. carrots, cut crosswise into1/4-inch slices (about 5 C.)
2 Tbsp. margarine, or butter
1 tsp. salt
1/2 tsp. ground nutmeg
Cooking Instructions
Sprinkle coconut evenly in ungreased jellyroll pan, 15-1/2 by 10-1/2 by 1 inch. Toast at 350 degrees F. until golden brown, 10 to 15 minutes, stirring occasionally and watching carefully.
