Carrots In Orange Basil Butter
Ingredients
2 medium carrots, cut into julienne strips
1 Tbsp. water
1 Tbsp. butter, or margarine
1/8 tsp. finely shredded orange peel
1 pinch dried basil, crushed
snipped parsley (optional)
Cooking Instructions
Place carrot strips in 1-quart casserole. Sprinkle with water. Microwave cook, covered, on 100 percent power for 2 to 3 minutes, or just until carrot strips are crisp and tender. Let stand, covered, while preparing butter mixture. For butter mixture, combine butter, or margarine, orange peel, and basil in a custard C.. Microwave cook, uncovered, on 100 percent power about 30 seconds, or until butter, or margarine, is melted. Drain carrots. Drizzle butter mixture over carrot strips. Garnish with snipped parsley, if desired.
