Carrot Salad
Ingredients
4 medium carrots, shredded
1 Tbsp. chopped fresh parsley
1 Tbsp. basil
1 Tbsp. scallions
3 Tbsp. lemon juice
2 Tbsp. safflower oil
salt and pepper
Cooking Instructions
Combine all ingredients in a mixing bowl, toss and serve.
