Carrot Raisin Salad 2
Ingredients
2 C. carrots, grated
1 C. crushed pineapple, drained, unsweetened
1/2 C. raisins
8 oz. yogurt, plain, low fat
7 lettuce leaves (optional)
Cooking Instructions
Combine carrots, pineapple, and raisins; mix well. Chill for 2 to 3 hours. Stir in yogurt. Serve on a lettuce leaf, if desired.
