Carrot Cake
Ingredients
1/2 C. carrots, grated
1-1/4 C. dates, chopped
1 C. raisins
1-1/3 C. water
1/4 C. applesauce, unsweetened
1/2 C. nuts, chopped
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. nutmeg
2 C. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
Cooking Instructions
Preheat oven to 350 degrees F. Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan. Bring to boil. Reduce heat, and simmer for 5 minutes. Cool. If desired, 1/2 cup chopped nuts may be added to the wet ingredients before combining with the dry. Stir the dry ingredients together. Combine the wet and dry mixtures, and stir until well blended. Spoon the batter into an 8 by 8 inch nonstick cake pan. Bake for 45 to 50 minutes.
