Carob Pudding
Ingredients
4 C. soy or nut milk
1/3 C. sweetener
1/4 C. carob powder
1/3 C. cornstarch
1 1/2 tsp. coffee substitute, optional
1 tsp. vanilla
1/2 tsp. salt
Cooking Instructions
Stir or blend all ingredients until smooth. Pour into a saucepan. Lightly boil, stirring until thick, about 10 minutes. Pour into a serving dish, cover and chill. Sprinkle with coconut before serving.
