Cantonese Sweet And Sour Chicken
Ingredients
1 whole chicken breast, skinned and boned
1 Tbsp. cornstarch
1 Tbsp. soy sauce
1 tsp. minced fresh ginger root
11-oz. can mandarin orange segments
2/3 C. sweet and sour sauce
2 Tbsp. vegetable oil; divided
1/2 lb. fresh snow peas; trimmed
5 green onions and tops, thinly sliced
1/2 C. unsalted roasted cashews
Cooking Instructions
Cut chicken into 1-inch pieces. Combine next 3 ingredients and chicken; let stand for 15 minutes. Meanwhile, reserving 1/4 C. syrup, drain mandarin oranges. Blend reserved syrup with sweet and sour sauce; set aside. Heat 1 Tbls. oil in hot wok or large skillet over medium-high heat. Add chicken and stir-fry for 2 minutes; remove. Heat remaining 1 Tbls. oil in same pan. Add snow-peas; stir-fry for 1 minute. Add green onions; stir-fry for 30 seconds more. Add chicken, cashews and sweet and sour sauce mixture; cook, stirring, until all ingredients are coated in sauce. Gently stir in mandarin oranges; heat through.
