Apple Chiffon Cake
Ingredients
Cake
1/3 C. puritan oil
3/4 C. sugar
2 eggs
3/4 C. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. nutmeg
1/4 tsp. ground ginger
1 C. finely chopped peeled apple
Topping
2 Tbsp. sugar
2 Tbsp. finely chopped walnuts
1/2 tsp. cinnamon
Cooking Instructions
Heat oven to 350. Combine oil and sugar in large bowl at medium speed of electric mixer. Add eggs. Beat well. Combine next 6 ingredients. Add to oil mixture. Beat until just blended. Stir in apples. Spread evenly in ungreased 9 x 9 x 2-inch pan. Combine sugar, nuts, and cinnamon. Sprinkle over batter. Bake at 350 for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cut into 3 x 2-1/4-inch rectangles. Serve warm or at room temperature.
