Cabbage Soup
Ingredients
1/2 pound white cabbage
4 each scallions
2 Tbsp. ghee or vegetable oil
2 1/2 C. water
1 1/4 C. vegetable stock
2 each ripe tomatoes, chopped
salt and pepper
croutons for garnish
Cooking Instructions
Roughly chop the cabbage and scallions. Heat ghee in large pot and sauté cabbage and scallions for about five minutes. Add water, stock and tomatoes, cover, bring to a boil and simmer for 15 minutes. Remove from pot, mash ingredients, add salt and pepper and gently re heat. Serve piping hot with croutons.
