Butternut Squash With Ginger
Ingredients
butternut squash, large
1 Tbsp. ginger root, minced, fresh
1/4 C. apple juice, unsweetened
Cooking Instructions
Peel and seed the squash. Cut into 1/2-inch cubes. Put the squash, ginger root, and apple juice into a lightly oiled baking dish. Cover and bake at 350 degrees F. for 50 to 60 minutes. Sprinkle with nutmeg just before serving.
