Brunch Casserole
Ingredients
1 pound lean ground beef
1/2 pound ground breakfast sausage
1 onion chopped
2 Tbsp. butter
2 garlic cloves minced
1 can sliced mushrooms
1 tsp. salt or to taste
1/2 tsp. nutmeg
1 package frozen spinach-10 oz. thawed, squeezed dry
3 Tbsp. flour
6 eggs beaten
3/4 C. milk scalded
1/2 C. shredded Cheddar cheese
Cooking Instructions
In a skillet, lightly brown meats and onion in butter. Drain excess fat and place meat mixture in a well greased crock pot. Stir in garlic, mushrooms, salt, nutmeg, spinach, and flour. Beat eggs and milk together, pour over meat mixture. Stir well, cover and cook on low for 7 to 9 hours, or until firm. Sprinkle with shredded cheese 5 minutes before serving.
