Broccoli Spinach Spread
Ingredients
1/4 C. extra virgin olive oil
1 tsp. whole cumin seeds
1/2 tsp. crushed red pepper flakes
2 Tbsp. fresh lime juice
1/2 tsp. salt
1/4 tsp. black pepper
1 pound broccoli, cut into 1/4 pieces, include stem
1/4 pound fresh spinach
1/2 C. water
2 Tbsp. grated coconut
Cooking Instructions
Heat oil in non stick frying pan over medium low heat. Add cumin and pepper flakes and fry for 1/2 minute. Stir in lime juice, salt, pepper, vegetables and water. Cover and simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes ). Stir occasionally. Immediately before serving, spread about 1 Tbls. of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.
