Breakfast Crepes
Ingredients
1 C. rice flour*
1/2 C. Urad flour*
2 tsp. salt
1 1/2 C. water
Cooking Instructions
The night before, mix ingredients or allow at least 12 hours to ferment. After 12 hours, mix again until batter is soft. Another 1/2 cup water may be necessary to make a smooth batter. Heat a small amount of oil in frying pan and spoon in a small amount of the batter. Cook until sides turn light brown and turn. Repeat until all the batter is used. Serve with coconut chutney or any curry. This recipe will serve 4 people. *Can be purchased at a market that offers food from India.
