Breaded Lemon Fish Fillets
Ingredients
1/2 C. crushed round crackers
1/4 tsp. salt
1/8 tsp. white pepper
1/4 C. margarine, melted
2 Tbsp. lemon juice
1 lb. fresh or frozen (defrosted) fish fillets, cut into serving pieces
Paprika
Cooking Instructions
Reserve 2 tablespoons cracker crumbs. Mix remaining crumbs with salt and pepper. Mix margarine and lemon juice. Dip fish into margarine mixture, then into cracker crumbs. Arrange fish with thickest parts to outside edge on microwave rack in baking dish. Sprinkle with paprika. Microwave uncovered on high (100%) 2 minutes; rotate baking dish 1/2 turn. Microwave until fish flakes easily with fork, 2 to 4 minutes longer. Sprinkle with reserved cracker crumbs. Garnish with lemon slices, if desired. 5 or 6 servings.
