Bran Muffins
Ingredients
1 1/2 C. all bran
1 1/2 C. water
1 Tbsp. cornstarch
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbsp. vinegar
1/3 C. molasses
1 1/4 C. flour
Cooking Instructions
Soak the bran in the water for about 5 minutes or so. Add the cornstarch and the molasses. Beat in the baking powder, baking soda and vinegar. Add the flour, mix well. It should be a thick but not dry dough. Add more flour or water if needed. Spoon into an oiled muffin tin. Bake at 400 degrees for 20 minutes.
