Braised Peas With Lettuce
Ingredients
3 leaf lettuce leaves
20 oz. frozen peas or 4 C. fresh shelled peas
8 medium green onions with tops, finely sliced
1 bay leaf
1 Tbsp. water
1 tsp. sugar
1/8 tsp. salt
1/8 tsp. pepper
2 Tbsp. minced parsley
1 Tbsp. butter or margarine
Cooking Instructions
Place the lettuce leaves in the bottom of a 10″ skillet. Add the peas, green onions, and bay leaf. Sprinkle with the water, sugar, salt, and pepper. Bring to a boil over high heat. Lower the heat and simmer, covered, for 10 to 15 minutes or until the peas are crisp-tender. drain peas well. Discard the lettuce and bay leaf. Toss peas with parsley and butter. Serves 4.
