Braised Mexican Pork Chops
Ingredients
2 1/2 C. tomato juice
1 Tbsp. chili powder
salt and pepper
1 C. rice
2 Tbsp. oil
1 chopped green pepper
1 chopped onion
6 (1-inch) pork chops, trimmed
Cooking Instructions
Combine juice, chili powder, salt and pepper. Bring to a boil. Add rice; cover. Simmer for 20 minutes. Set aside. Sauté pepper and onion in oil. Add to rice and toss with a fork. Brown chops on both sides. Place rice mixture in bottom of casserole. Place chops on top, cover and bake 1 hour at 350 degrees.
