Bourbon Carrot Cake With Bourbon Glaze
Ingredients
Beat until well mixed
2/3 C. oil
1 C. sugar
Beat into the above mixture
2 eggs
Stir in 1 C. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Add and mix well
3 Tbsp. bourbon
1 1/2 C. grated carrots
1 C. chopped pecans.
Bourbon glaze:
1 C. powdered sugar
2 Tbsp. hot water
1 Tbsp. Bourbon
Cooking Instructions
Pour into greased floured 9×9-inch cake pan. Bake at 325 for 40 minutes. Cool in pan. Bourbon glaze: Blend together. Spread over cooled cake.
