Blueberry Tea Cake
Ingredients
4 C. blueberries (fresh or frozen)
4 C. flour
4 tsp. baking powder
1 tsp. salt
1/2 C. butter
1 1/2 C. sugar
2 eggs
1 C. milk
Topping
1 C. sugar
1/2 C. flour
1 tsp. cinnamon
1/2 C. butter
Cooking Instructions
In a large bowl, combine flour, baking powder and salt. In smaller bowl, blend together butter, sugar, eggs and milk until well mixed. Add to dry the ingredients Add blueberries either with a spatula or by using mixer. Topping – Cut together sugar, flour cinnamon and 1/2 C. butter. Sprinkle over batter. Bake at 400 for 40 minutes. Reduce heat to 350 for 20-25 minutes. When a toothpick comes out clean it is done.
