Blueberry Muffins
Ingredients
2 C. white flour
1 Tbsp. baking powder
1/8 tsp. salt
3/4 C. sugar
1 ounce tofu
1/2 C. water
3 Tbsp. oil
1 C. blueberries, fresh or frozen
Cooking Instructions
Preheat the oven to 350 degrees. Grease muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Thoroughly mash the tofu, and mix together with the water and oil, or process in blender or food processor. Reserve 1/4 C. of the flour mixture, then mix the rest together with the water and oil mixture. Toss reserved flour mixture over blueberries, then stir them into the batter. Divide batter evenly into muffin C. and bake until toothpick inserted in center comes out clean.
