Blueberry Muffins 1
Ingredients
2 large eggs
2 C. whole wheat flour
1 C. unsweetened applesauce
1/2 tsp. cinnamon
1/4 C. light oil (sunflower, corn, canola)
1/2 tsp. baking soda
1 C. fresh or frozen blueberries
1/2 tsp. salt
Cooking Instructions
Prepare muffin cup with oil, or use paper or foil liners. Preheat oven to 425 degrees F. In a large bowl, stir together flour, cinnamon, baking soda and salt. Set aside. In a small bowl, beat eggs until lemony, then stir in applesauce and oil. Pour egg mixture into the dry ingredients, and beat until well mixed. Gently stir in blueberries. Fill muffin cup 2/3 full. Bake at 425 degrees F. for 30 minutes, or until nicely browned. Serve warm or cold.
