Blueberry Muffin Cake
Ingredients
1-1/2 C. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/2 C. margarine
1-1/2 C. floured blueberries
2 eggs
1/3 C. milk
1 tsp. vanilla
1 C. sugar
Cooking Instructions
Sift flour, baking powder, and salt together. Cream the shortening with sugar until fluffy; add eggs and beat well. Add flour mixture to creamed mixture alternately with milk. Mix extremely well. The longer you beat it the better the cake will be. I always try for at least 5 minutes. Fold in vanilla and floured berries. Pour batter into a well-greased and floured 8-inch square pan. Sprinkle with granulated sugar. Bake at 350 degrees for 35 to 40 minutes.
