Blueberry Graham Cake
Ingredients
1/2 C. butter or margarine
1 C. sugar
3 eggs
3/4 C. milk
1 pint blueberries
1 C. all-purpose flour
1 1/2 C. graham cracker crumbs
1 tsp. baking powder
1 tsp. baking soda
Additional blueberries for garnish
Whipped cream or topping for garnish
Cooking Instructions
Cream butter and beat in sugar. Beat in eggs, 1 at a time. Stir in milk. Combine berries, graham cracker crumbs, flour, baking powder and baking soda. Add all at once to egg mixture and beat until smooth. Pour into greased 8-inch springform baking pan. Bake in preheated 375 oven 50-60 minutes, or until top is richly browned. Arrange berries over top of cake and garnish with dollop of whipped cream.
