Blue Ribbon Banana Cake
Ingredients
3/4 C. shortening
1 1/2 C. sugar
2 eggs
1 C. bananas; mashed
1/2 tsp. salt
2 C. cake flour; sifted
1 tsp. soda
1 tsp. baking powder
1/2 C. buttermilk
1 tsp. vanilla
1/2 C. pecans; chopped
Cooking Instructions
Cream together shortening and sugar until fluffy. Add eggs; beat 2 minutes. Add mashed bananas; beat 2 minutes. Sift dry ingredients together; add to creamed mixture along with buttermilk and vanilla. Beat 2 minutes. Stir in nuts. Pour into 2 greased and floured 9- inch round layer cake pans. Bake 25-30 minutes. Cool layers. Fill and frost as desired.
