Vegetable Soup With Zucchini 2
Ingredients
1 large Onion, chopped
1/4 C. Butter
3 medium Sweet potatoes, peeled and chopped
3 medium Zucchini, chopped
1 bunch Broccoli, chopped
2 quart Chicken stock OR
2 quart Vegetable broth
2 medium Red potatoes, shredded
3 Cloves garlic, minced
1 can Creamed corn OR
3/4 C. Fresh corn kernels
1 tsp. Celery seed
1 tsp. Ground cumin
2 tsp. Salt
1 tsp. Pepper
2 C. Light cream
Cooking Instructions
Place all ingredients in a 4 to 5 quart crock pot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving add the cream, if using. Heat through and serve.
